Wine Gifts for the Holidays



A bountiful Thanksgiving meal yields one of the best parts of the holiday: the leftovers. With the fruit-forward notes of Bow Tie Chardonnay,

this leftover dish becomes a main event. Makes 1 sandwich.

Thanksgiving Panini Recipe with Bow Tie Chardonnay


3 Tbsp unsalted butter
½ small onion, finely diced
¼ cup Bow Tie Chardonnay
3 Tbsp cranberry sauce
1 tsp whole grain mustard
Zest of 1 orange
8 – 10 oz turkey breasts (or any other turkey),
thinly sliced
1 cup turkey gravy (optional)
2 large slices sourdough bread
2 cups spinach
4 slices brie cheese
¼ cup olive oil
2 cloves garlic
1 sprig rosemary


  1. Place butter and onions in a sauté pan with a pinch of salt and pepper. Cook over medium-low heat until onion is tender, dark and caramelized. Add the Bow Tie Chardonnay and reduce until almost dry. Add the cranberry sauce and mustard. Stir until warm and remove from heat. Add orange zest and mix well. Pour this cranberry spread into a small bowl and set aside.
  2. Using the flat side of a knife, gently crush the garlic cloves. Add the garlic, rosemary and olive oil to a small sauce pot over very low heat and cook until the garlic has a light golden color. Remove garlic and rosemary and set aside.
  3. Clean the sauté pan and add your sliced turkey and gravy. Cook over low heat until hot. Taste and season with salt and pepper. Remove from heat. (Alternative: Place the turkey in an oven-safe dish without the gravy and cover with foil. Heat in a 300° F oven until hot.)
  4. Build your sandwich by covering each side of bread in cranberry spread. Next add your brie slices, ensuring a nice even layer on each side of the bread. Add the spinach leaves to one side of the bread. Finally, lift the turkey out of the gravy and add to the top on the spinach. Pour any extra gravy in a small bowl.
  5. Using a pastry brush, brush both sides of your sandwich in the garlic-rosemary seasoned olive oil. Place your sandwich in a preheated panini grill and cook until bread is golden brown.
  6. Using a bread knife slice the sandwich in half on a bias and place on a dinner plate. Place the leftover gravy in a small bowl ensuring it is hot, well-seasoned and the desired consistency (thin it with a bit of water if necessary). Add salt and a dash of lemon juice or sherry vinegar to the gravy if it tastes bland. Garnish the gravy with a drizzle of the seasoned olive oil and serve with the sandwich for dipping.
