CHEF FREEMAN GOES
Starting September 29, Chef Shenarri Freeman will take over our iconic Bubble Room to give you a whole new idea about what nourishment can taste like. As part of Shifting the Lens, our limited culinary series, Chef Freeman is bringing something completely new to the Bubble Room—her vegan spin on traditional southern fare and soul food dishes. With her 5+ course plant-based menu, she hopes to shine a light on the fact that pairing wine with vegan food, while not unheard of, is often overlooked and misunderstood.

Chef Freeman inspires our Shifting the Lens series because she shares our belief that an exceptional meal goes far beyond pleasing the palate—it has the power to heal us and connect us with something larger than ourselves.
Complemented with the perfect wine with collaboration from award-winning winemaker Nicole Hitchcock, these dishes highlight fresh, local ingredients with a vegan spin.
Here are just a few of the courses you can look forward to:
• Basil cucumber gazpacho
• Palm cake (vegan crab cakes) with grits and collard greens
• Jerk fried chicken of the woods mushrooms, pickled radish and almond ricotta dill

Guests can expect a five+ course plant-based menu by Chef Freeman carefully paired with small-lot J wines crafted by winemaker Nicole Hitchcock. The experience will also feature the Shifted Lens Limited Release Brut Rosé produced in conjunction with this culinary series.
