From August 18 – 21 and August 25 – 28, guest chef-in-residence Preeti Mistry will fire up the kitchen of our iconic Bubble Room for their part of Shifting the Lens, our limited culinary series that aims to expand your idea of what a food and wine pairing can be. Expect to walk away from this 5+ course culinary experience with a greater understanding of the endless possibilities of flavor and texture combinations that can be created with familiar ingredients.

Two-time nominee for Best Chef of the West by the James Beard Foundation, Chef Mistry’s nuanced flavor combinations are inspired by their upbringing on traditional Indian cuisine. Formally trained at Le Cordon Bleu in France, they quickly discovered that in order to learn how to cook the food they grew up loving, they had to put in the practice and research outside of the classroom. Turning to experimentation, memory and traditional recipes, Chef Mistry has made it their mission to showcase the myriad possibilities of Indian flavors, which filled the menus at their two former restaurants, Juhu Beach Club and Navi Kitchen.
Complemented with the perfect wine with help from award-winning winemaker Nicole Hitchcock, Chef Mistry will unveil dishes carefully crafted with seasonal, local ingredients.
Here are just a few of the courses you can look forward to:
• Green garbanzo beans, stone fruit, sprouted mung puri with hibiscus pani
• Tomato tamarind rasam, pickled tomato, handvo madeline and mustard-spiked butter
• Burnt masala quail with saffron rice and a tamarind glaze
• Shirkhand & Puri: Saffron, cardamom yogurt pudding, sweet crispy puri and stone fruit chutney
