Starting July 7th, Chef Jenny Dorsey will take over our iconic Bubble Room to guide you on a journey of the senses unlike any other. As part of Shifting the Lens, our limited culinary series, Chef Dorsey plans to transform the idea of a traditional food and wine pairing with unexpected flavor combinations and a narrative arc that will give guests something new and disarming.

Expect Chef Dorsey’s extensive experience of upending people’s perception of food to be the focal point of her guest residency. After she co-founded the non-profit Studio ATAO—which aims to inspire through social justice education, vulnerable conversations and community-building—she debuted a series called Asian in America, a multi-media meal that she paired with virtual reality, augmented reality, poetry and spoken word components, all centered on the Asian American experience.
Complemented with the perfect wine with help from award-winning winemaker Nicole Hitchcock, these dishes highlight fresh, local ingredients in exciting, thought-provoking ways.
Here are just a few of the courses you can look forward to:
• Duck fat-poached oysters with raw corn juice, peeled tomatoes, perilla and raw sambal
• Chicken poached in smoked cinnamon broth with fermented cauliflower and smoked cucumber
• Entrement with serrano and iru shortbread, pomegranate mousse, banana juice jelly and ice cream foam
