Gougere

J Vineyards & Winery has been at the forefront of the wine and food experience since our first tasting program launched in 1999. All of the recipes have been created by our J Culinary Team to pair perfectly with our exceptional portfolio of varietal and sparkling wines.

Ingredients:

1 cup water
1 stick unsalted butter
1 cup sifted flour
4 eggs
1 cup Bellwether Farms Crescenza cheese
1 teaspoon salt
½ teaspoon cayenne pepper
Zest of two lemons, finely chopped
2 pinches of nutmeg

Method:

Preheat oven to 425 °. Bring water to boil in a saucepan. Add butter, salt, cayenne, and nutmeg and heat until butter is melted. Remove from heat. Add flour and blend thoroughly. Return to heat, stirring, for 1 to 2 minutes until mixture pulls away from side of pan and forms a ball. Remove from heat and make a well in the center of the mixture. Add eggs one at a time and beat after each addition until well blended. Add the cheese and mix well.  On a parchment lined baking sheet, place a spoonful of the mixture.  Place in oven for 10 minutes.  Reduce the oven heat to 350.  Continue to bake for 25 minutes.  Do not remove from the oven until they are firm to the touch.
