Vanilla Poached Pears

J Vineyards & Winery has been at the forefront of the wine and food experience since our first tasting program launched in 1999. All of the recipes have been created by our J Culinary Team to pair perfectly with our exceptional portfolio of varietal and sparkling wines.


4 Asian Pears cored and cut into 8 slices (Shinseiki is preferable for their thin skins)
4 Cup of Water
1 Cup of Russian River Chardonnay
3 Madagascar Vanilla Beans, slice beans lengthwise
1 Cup of Honey


1) Pour water, wine, honey and place vanilla beans into a medium size sauce pan.
2) Bring liquid to a simmer dissolving honey and place the sliced pears into the liquid and continue simmering for 5 minutes. 
3) Pour pears into a heat proof container and allow to chill in the refrigerator.
4) Serve when chilled.

Notes:  This recipe allow the texture and natural flavor to come through in the pear while preserving it up to a month.

To start the meal, place some sheep’s milk ricotta on grilled crostini and top with the Vanilla Pear condiment. Serve over a mixed green salad lightly dressed with a citrus vinaigrette and serve with Strata Chardonnay.

For a main course option use this condiment stuffed inside Pork Loin with chopped pecans. Serve with forbidden rice pilaf, sautéed Swiss chard, and a pinot reduction. Pair this with Bow Tie Pinot Noir.

For the desert, serve the condiment with a slice of almond tart, and a drizzle of cherry sauce.  Pair with the Pinot Meunier.
