Riesling Grapeseed Oil Custard

Serves 4


2 ¼  cups Half and Half                   
½ cup + 1 tablespoon Sugar                                          
2 teaspoons Salt                                                
4 Egg yolks                           
2 Tablespoons + 2 teaspoons cornstarch                                
¼ cup Whole Vine Riesling Oil 
Fresh berries for garnish                                  


In a saucepan, combine half and half, sugar and salt; bring slowly to boil. In a small bowl, whisk together egg yolks and cornstarch. Slowly whisk the hot mixture into the yolks. Pour mixture back into the saucepan, cook at low temperature, and bring to simmer, whisking constantly until it thickens. Remove from the heat, whisk the oil. Set over a bowl of ice water and cool at room temperature. 

To serve, divide custard among 4 single-serving dishes. Top with fresh berries.
