Assorted Savory Twists with Goat Cheese Mousse

Ingredients:

Assorted Savory Twists:

Egg Wash ( 1 egg + 1 Tablespoon water) Sprinkling Mixtures:
To create the sprinkling mixtures - use one or all four of these combinations:
Equal parts - Curry Powder & Sugar
Equal parts - Paprika & Cayenne
Equal parts - Lemon Zest, Chopped Parsley, Kosher Salt
Equal parts - Poppyseeds & Sesame seeds

Goat Cheese Mousse:
13 oz. Fresh Goat Cheese
6 oz. Cream Cheese
2 teaspoons Kosher Salt
6 oz. Heavy Whipping Cream, whipped to soft peaks
Fresh Chopped Chives for Garnish

Method:

Assorted Savory Twists:
Brush puff pastry sheet with egg wash. Sprinkle spice mix of your choice evenly over the sheet. Cut the pastry into ½ inch wide strips. Holding one end of the strip to your work surface, use the other hand to roll the pastry away from you, twisting the strip into a ribbon. Transfer the twists to a parchment-lined baking sheet.

Bake at 350° for 12 minutes until golden. For a colorful presentation, use a different sprinkling mix for each sheet of puff pastry.

Goat Cheese Mousse:
In a food processor, puree the cream cheese and goat cheese until very smooth. Transfer to a medium-sized mixing bowl. Season with salt. Fold in whipped cream. Garnish with chopped chives before serving.
