It signals celebration, yes—but more than that, it signals craft. Time. Transformation.
During Sparkling Wine Week, we take a closer look at what’s bubbling beneath that moment—and how we continue to push it forward.

What Is the Traditional Method?
At J, every bottle of sparkling begins the same way: with intention.
We use the traditional method—where the second fermentation happens inside the bottle itself. That’s where the bubbles come from, and where the wine begins to take shape.
It starts simply. Grapes are pressed, fermented into a still wine, and carefully blended into a cuvée. From there, each bottle receives a small addition of yeast and sugar, sealed, and left to begin a second, slower fermentation.
That’s where the transformation happens.
Time, Pressure, and Precision
Inside each bottle, the wine evolves. As the yeast breaks down, it creates both the fine bubbles and the layered texture that define traditional method sparkling—notes of toast, depth, and a creamier structure.
From there, every step is deliberate:
· Bottles are gradually turned to guide the lees into the neck
· The wine is disgorged and topped with dosage
· Then left again to integrate and settle before release
It’s a process measured not in days, but in patience.
