Processing
Whole grape clusters were hand-harvested at 24.3 Brix for optimum ripeness and lively acidity. They were then pressed gently in J’s Coquard press. This uniquely gentle method of pressing minimizes the extraction of harsh components from the skins and seeds of the grapes. The wine is made from the free-run juice drained from the Coquard press, fermented in stainless steel tanks, and chilled at 55 degrees. This wine did not undergo malolactic fermentation.
Aging
This is a bright, clean wine designed to be enjoyed upon release. There is no oak aging to weigh it down. All aging took place in chilled stainless steel tanks before bottling to preserve the fresh fruit character.
