Ingredients:

20 oz. smoked salmon, chopped
½ large red onion, minced
1 tablespoon capers, minced
2 tablespoon chives, cut small
¼ cup lemon juice

Method:

Fold onion, capers, chives and lemon juice into smoked salmon. Adjust seasoning. Using two small spoons, shape the mixture into quennelles and serve on slices of cucumber.
